Lettuce prefers a temperate type of climate. It is widespread in Italy; in colder climate regions it is grown from late spring to early fall, while in warmer areas it is grown from late summer to the following spring. The optimum temperature for head lettuce is about seventeen degrees, but it can also withstand temperatures that are not exaggeratedly cold. Young seedlings in vegetation are very fearful of frost. Sowing should be done in seedbeds during the period from January to September; if sowing outdoors, March and April are recommended. By the time the new seedlings have developed about five leaves, they should be transplanted at a distance of about thirty centimeters apart at a depth of about half an inch, taking care not to cover the collar with soil. The lettuce will be harvested when it has reached the right color of the variety and the size we desire.
